These delicious tubers are so easy to grow, are ready to harvest at the coldest time of year and are really good for you.

They do have a bit of a reputation and are sometimes referred to as ‘fartichokes’. This is due to them containing an indigestable carbohydrate ‘inulin’ which also supports the healthy growth of gut bacteria. Happily, the gaseous effects can easily be negated. Cooking them with an acid mostly converts the inulin into fructose which can easily be digested. Cooking with the herb winter savory also helps as it aids digestion hence I am including seed for the herb along with the tubers. It is also worth mentioning that we can build up a tolerance to the effects of inulin over time so eating a small amount at first and slowly increasing it would be my best advice.

With regards to growing these tubers they really are so easy. Just plant them and watch them grow…and grow. They can reach over ten feet in a single growing season! They make excellent summer privacy or windbreaks! The foliage will die back completely in the winter but the tubers are completely hardy and will be ready to harvest between November and March.
